Steak No.1
I haven't cooked a steak in about 20 years I'd say, not being much of a beef eater. But Quoc's cousin Sandy got us a stack of filet mignon so we'll be enjoying them over the next wee while. Here's version 1. It's done with a huitlacoche butter and goat cheese chive mashed potaotes. THe huitlacoche butter is amazing with grilled corn too for the summer.
huitlacoche butter [ huitlacoche, onion, garlic, epazote (or oregano), jalapeƱo, butter ]

Easter Gifts
Treats for Easter. From our lovely Pumpkin Pond cooking partners Lisa and Anngel. It's a soft, crumbly, gooey cake made from almonds, eggs, Meyer lemon, and a hidden kumquat... citrus sweetness. The peeps are nesting.

Chicken and potato
The chicken was rubbed with paprika, smoked paprika, and olive oil and roasted over carrots and celery. The mash was made with home made sofrito that our friend Kimm gave us, and added green onions and cheese. It was an improv on papas chorreadas our friend Juan brought for a meal once... exploding potatoes from Columbia.
Full sofrito recipe in the comments.
