Risotto coi finocchi

Fennel is cooked down to a pulp, covered, with onion, in olive oil and butter. Then the risotto is cooked as a regular risotto. Use about 2 fennel bulbs to 2 cups of riso.

Mr. Dedapper's Prawn and Cucumber Curry

Fry this Thai curry paste for about 3 minutes [ chilis, salt, lemongrass, fresh turmeric, shallot, garlic, white peppercorns, shrimp paste ], add sugar, fish sauce, tamarind water. Add prawns, cucumber, and betel eaves (or a mix of mint and cilantro). Season.

Sandwich and salad

Turkey sandwich, tarragon mayonnaise. Baby greens with pear and pine nuts.
