A meal for two single gentlemen who are about to be married

Our two very favourite London gents and super talented graphic designers Niall&Nigel got married last weekend in London. It was a perfect weekend. A huge celebration of their love and all the friends and family who love them. The night before the big day, we took a trip to the Borough market and got some supplies for their last meal as single gents.


Endives wrapped in bacon and baked.

Pimientos de padrón, delicious fried in just a little olive oil and salt until the skins start to char.

Quoc's favourite rooty roast. Potatoes, sweet potatoes, beets, cranberries.

Frying up a rabbit liver and kidneys in some chorizo fat.

A de-boned free range chicken stuffed with a de-doned rabbit and roasted.

Other stuffing elements included fresh chorizo, the kidney and liver, herbs, and almonds.
The chicken was amazing, the rabbit a wee bit dry, which made me think that brining the rabbit first might have been a good idea. But it was tasty nonetheless.
